Zazuar
Zazuar is a town and a municipality located in the province of Burgos, autonomous community of Castilla y León (Spain), region of La Ribera, judicial district of Aranda, municipality of the same name.
Toponymy
In Towns and surnames of Spain: etymological dictionary, by Julián Aydillo San Martín, it is indicated that Zazuar would come from Aza-or, meaning "rocky height& #34;, or "on a hill", according to Pascual Madoz.
In Santo Domingo de Caleruega, in its socio-political context, 1170-1221, dedicated to Domingo de Guzmán, mention is made of a document dated September 30, 1177 in Burgos, signed by Alfonso VIII of Castile and prepared by two clerics, one of them the archpriest of Sozuuar, identifying the place name with the current Zazuar.
Geography
Location
The municipality of Zazuar is located in the Ribera del Duero, 12 km northeast of Aranda de Duero (Burgos), south of the province of Burgos, 86 km from the capital, in the autonomous community of Castilla y Leon (Spain). The coordinates of the municipality are: latitude: 41° 41' 42" N, longitude: 3° 33' 18" O. It has an area of 22.5 km² and is 839 meters above sea level according to the National Geographic Institute.
Hydrography
The Arandilla river passes through its municipal area, which will end up leaving its waters in the Duero.
Orography
The highest point in the municipality of Zazuar is at "Alto de la Casa", with a height of 916 meters above sea level.
Climate
The climate of the Ribera del Duero is characterized by a moderate-low rainfall (450 mm of rain per year) which, together with its dry summers (35 - 40 °C) and long and rigorous winters (up to -15 °C), and with marked thermal oscillations throughout the seasons, frame it within a Mediterranean climate, with more than 2400 hours of sunshine, whose primary character is continental.
Wildlife
- Zorros (Vulpes vulpes), corzos (Capreolus capreolus), rabbits (Leporidae) and wild boars (Sus scrofa), are some of the species that can be seen in the mountains of Zazuar.
- Among the avifauna stands out the presence of sparrows, pigeons, urracas, grajos, crows as well as some species of rapaces like Milano (Milvus milvus),. Also some isolated specimen of stork, lettuce.
Flora
In the municipality of Zazuar you can find a wide variety of Flora:
- Wild trees such as pine trees, carrasca oak (Quercus ilex) miera juniper (Juniperus oxycedrus), Sabina albar (Juniperus thurifera), nogales, almonds, cherry trees, endrinos, chopos, plataneros and some insulated specimen of pineapple (Abis pinsapo), serbal of hunters (Sorbus aucuparia), figuera (Ficus carica).....
- Busts and scrubs like oregano thyme, jar, rosemary lavender...
- Mushrooms and mushrooms like NíscalosLactarius deliciosus) studs of cardo (Pleurotus eryngii), parasols (Macrolepiota procera), wolf farts (Lycoperdon perlatum).

Economy
Zazuar's economy is mainly based on the cultivation of vines and beets as well as the existing industry in Aranda de Duero. The village has a bakery, a self-service store and two bars that normally do not serve meals. In terms of hospitality, Zazuar also has four rural tourism houses.
The San Andrés Cooperative sells “Vegazar” wine in different varieties: white, rosé, young, oak and crianza. It has recently begun to market a reserve under the name "Señorío de Zazuar". The rosé "Vegazar" has won the following awards:

The «Tinto Crianza 2005» has obtained the «Zarcillo de Oro» award in the 2009 edition.

In the 1991 municipal elections in Spain, Tomás Causín Aguilera was elected mayor of the Popular Party. He obtained 138 votes out of 249 counted.

Monuments and places of interest
- Church of Saint Andrew Church of great dimensions initiated in the centuryXVI and whose construction lasted approximately two centuries.
- Justice roll at the Plaza Mayor of the village.
- Important set of wineries inside the village. Many of them date from the centuryXVII.
- Chapel of San Vitores. The Statutes of the Brotherhood date from the CenturyXVII.

Gastronomy
A wide variety of products, among which it is worth highlighting those of pig origin from traditional slaughters as well as high-quality lamb (prepared for roasting), either as roast lamb in a wood-fired oven or as grilled chops. To drink, local wines, with Denomination of Origin Ribera del Duero.
