Sashimi
The sashimi (刺身 , ''sashimi''?) is a Japanese dish that consists mainly of raw seafood or fish, finely sliced, although not as much as a carpaccio.
A sauce (such as soy sauce, which is salty, with wasabi, a spicy Japanese seasoning, or ponzu sauce) and a dressing are served with them. plain as grated daikon radish. Typically, the ingredients are served raw, although some are slightly cooked, such as octopus that is lightly boiled. Less frequent, although not for that reason unknown, are vegetarian sashimi such as yuba (soy milk curdled extract), or raw red meat from beef or horse.
The name sashimi comes from the fish tail that was placed next to the slices, so that it could be recognized what type it was.
It is usually served with small slices of preserved ginger, which are eaten between one type of sashimi and another, that is, when the flavor is to be changed. The slices can be eaten alone or dipped in the sauce.
It could be said, simplifying, that sashimi is similar to sushi but without rice, although the repertoire of sushi ingredients is much broader, including vegetables, such as cucumber, or tortilla, etc.
Security
Like other raw foods, consuming sashimi can lead to illness caused when bacteria or parasites are present; for example, anisakiasis is a disease caused by the accidental ingestion of nematode larvae of the Anisakidae family, mainly Anisakis simplex but also Ppseudoterranova decipiens. Additionally, improperly prepared Fugu fish may contain tetrodotoxin, a potent neurotoxin. Another type of sashimi-borne illness that could occur after consuming contaminated sashimi is diphyllobothriasis. This disease is an infection within the intestines that occurs when the tapeworm Diphyllobothrium latum is consumed. Common fish such as trout, salmon, pike, and bass harbor these parasitic larvae in their muscles. Due to the innovation of the refrigerated transportation system combined with the consumption of salmon and trout, an increasing number of cases are recorded in northern Japan every year due to the spread of this disease.
