The machitos is a food dish that is served in Mexico, mainly in the cities of Monterrey and Guadalajara, and has the viscera and intestines of the goat as its main ingredient.

Preparation

For better preparation, the goat must be 28 days old so that it has the true flavor of the dish.

Because of their name, many people confuse them with criadillas, which are the testicles of beef or lamb roasted over charcoal. However, the machitos are actually the intestines of the same animals, very similar to what they call chinchulines in Argentina and in Uruguay, chotos.

Macho style

In Monterrey it is roasted over charcoal and served accompanied by lettuce, tomato and sliced onion, tortillas and molcajeteada sauce. Historians consider that the dish is of Sephardic origin. In Guadalajara, it is braided and browned and is one of the types of meats served in the dish called birria.
