The copús is one of the best-known dishes of Piurana cuisine, an outstanding cuisine within Peruvian gastronomy.

Description

The copús is a gathering of ingredients that are baked underground, being similar to the pachamanca and the huatia with the difference that the oven is sealed with blankets and clay, and the meats are cooked inside a clay pot.

It is made with ripe fried plantains, sweet potatoes, and seasoned chicken, turkey, goat, and ram meat.

It is usually consumed in various types of communal celebrations, such as weddings, baptisms and religious rites.
