The Chajá is a typical dessert of Uruguayan gastronomy. It was created by Orlando Castellano, owner of the Las Familias Confectionery in the city of Paysandú on April 27, 1927.

It owes its name to the chajá, a bird that inhabits the central and southern areas of South America, and which is particularly abundant in the Department of Paysandú.

The components of the dessert are meringue, sponge cake, double cream and its characteristic fruits are peach and strawberry. Variants can also be made with dulce de leche and chocolate.

In June 2022, it was awarded by TasteAtlas as one of the 50 best desserts in the world, placing the sanducero dessert in 19th place.[citation required ]
